Yellow Dock Plant – sold as a single plant. Size as in photos. Yellow dock is a plant native to Europe and Asia. Also called “curled dock” or “Rumex Crispus,” it is cultivated as a vegetable in Europe and grows throughout North America. Yellow dock is a herb. The leaf stalks are used in salads. The root and fruits are used as medicine.
A low growing basal rosette of leaves grows upward to 1.5ft in bloom. Plants display multi-stemmed flower stalks with unusual small light green or pale yellow flowers followed by seeds borne in papery coverings turning from pale green to reddish brown when mature.
Yellow Dock Culinary Uses
- Tender yellow dock leaves are steamed much like spinach, then served with olive oil and garlic.
- Leaves and stems can also be eaten raw or added to salads.
- The seeds are frequently used as a healthy coffee substitute.

- The Yellow Dock Plant has a long taproot, so great care must be employed during transplanting, so as not to damage the roots.
- Can be successfully grown in containers.
