There are 3 Tarragon Varieties: French Tarragon, Russian Tarragon and Mexican Tarragon. Each type of tarragon has some differences in taste and aroma.
French tarragon has a flavor combination of licorice with a hint of citrus and it is slightly sweet. Russian tarragon has a stronger taste and is on the bitter side. The Mexican tarragon’s flavor is similar to French tarragon with the hint of anise and much stronger than Russian tarragon.
